Flambeed pineapple skewer “Mojito”

INGREDIENTS:
1 Pineapple ripe
7cl of rum
20g white cane suga
A few sprigs of mint

PREPARATION:
1. Switch on your Kokko and set it to an enclosure temperature of 280°C.
2. Peel the pineapple, then cut it into large irregular pieces, place them on the skewers and add half of the rum, sugar and whole mint leaves, marinate for 1 hour in the fridge.
3. Bring the ½ baking tray up to temperature and cook the skewers for 4 minutes on each side. As the pineapple is very sweet make sure not caramelize them too much. Add the rest of the rum to the ½ baking tray to flambé the skewers. Serve immediately with a dumpling of mojito sorbet.
