To calibrate the thermometer: immerse the tip in boiling water and wait 1 minute for the needle to stabilise.
Place the thermometer on a flat surface and turn the tip with a flathead screwdriver to move the needle (you'll need to force it).
Repeat these steps until the needle stabilises at 100°C, then remount the thermometer on the lid.

To remove the steam condensed inside the thermometer: remove the screw, washer and thermometer surround, then place in a baking dish at 110°C fan-assisted heat for 10 minutes.
