Medley of grilled vegetables with thyme
Cooking time: 20 min - Preparation time: 20 min - Serves: 6 people
Ingredients
1 zucchini
1 eggplant
1 red pepper
1 pepper
green 1 yellow pepper
1 orange pepper
1 red onion 4 sprigs of thyme
olive oil Salt and pepper Preparation
1. Wash all vegetables. Cut eggplant and zucchini thinly. Cut peppers in half, remove the core and seeds and expand into strips.
2. Season all vegetables salt and pepper and cook on oiled Kokko, 2 minutes each side for aubergines and courgettes, 5 minutes per side for peppers.
3. Remove the vegetables as and when they cook in a large dish. Season with a little oil Olive, add the thyme, stir and let cool.
4. To serve, spread the vegetables in a serving dish by arranging them harmoniously. Add the chopped red onion and some chopped parsley.
Tip: Serve as an accompaniment to meat or grilled fish p>.
