Food 2020 trends
New year, new decade, and on the kitchen side, the renewal is being felt too. After a month devoted to detox, it's time to get up to speed on the culinary trends that will make 2020.
1 - Declare war on food waste and reduce waste.
No more family-sized and over-packaged products. To avoid having to throw out expired products on a regular basis, we're shopping more often and buying only what we're going to consume in the next few days. We buy our fruit and vegetables at the market or via short circuits to avoid supermarket bags and trays, and for our tea, cereals, pasta, biscuits, nuts, etc. we opt for bulk.
2 - Drinking more and more... without alcohol!
Have you taken up the Dry January challenge (January without alcohol)? You can go into overtime. Drinking less is the trend for 2020. Bars and restaurants are also in the trend and offer more and more alcohol-free cocktails on their menus. Sober is the new cool in society.
3 - The explosion of the vegan diet.
More respectful of the environment and animal well-being, better for health, it is now more than popular. With the many substitutes for animal products on offer, there is plenty to be tempted.
4 - Sulking meat.
Not yet ready to adopt a 100% vegetable diet? We cut the steak in half and in 2020, we become flexitarian. In other words, we eat meat less often, but of high quality. That's good, because smoked, roasted or grilled, seafood, fish, fruits and vegetables are also delicious on the barbecue.
5 - A richer diet.
It is obviously not a question of eating more fat but of opting for products based on wholemeal flours, which are richer in fibre, vitamins and minerals, unlike refined "white" flours, from which the husk of the grain containing all these trace elements has been removed. We are also thinking of varying cereals and legumes: quinoa, rye, spelt, rice, buckwheat, maize, lupin, lentils, chickpeas...
6 - Ciao to the aperitifs and hello to the unique dishes.
Home-made food is popular and more and more of us are getting into - or at least trying to - the kitchen. And in 2020, we're going straight to the point by offering our guests a unique dish.
7 - We return to the recipes of yesteryear.
Local cuisine, family traditions, culinary secrets handed down from generation to generation, that's what makes you salivate this year. We go back to our roots and reinterpret the recipes of our parents and grandparents. But beware, because of the ecological emergency, we twist the classics like the hashish Parmentier or lasagne by replacing meat with vegetable proteins.
8 - We learn about Japanese cuisine.
To live to the rhythm of the next Olympics which will take place during the summer of 2020 in Tokyo, we take out our chopsticks to taste typical dishes from this rich and varied but also healthy gastronomy. You can treat yourself to bentos, ramens, gyozas or even yakitoris, which you can make yourself.
