The rectangular olive wood boards are designed for hot smoking. To use them, simply place them directly on the grill of your Kokko. Cooking on a wooden plank allows the food to be infused with the delicate flavor of the wood.
You can soak the boards in water for 30 minutes before using them to increase the amount of smoke during cooking.
