How do I start the Kokko ceramic barbecue?
The Kokko ceramic barbecue allows for both quick and easy lighting.

Step 1
Open the lid of the Kokko, remove the stainless steel grill, and then place 3 to 4 crumpled sheets of newspaper at the bottom of the Kokko on the black cast iron plate. You can add one or two fire starters for greater efficiency.

Step 2
Arrange your charcoal around the newspaper and fire starters. Light the newspaper with a match or gas lighter and let it burn for 40 to 60 seconds before closing the dome.

Step 3
Now, close the lid and gently open the chimney and the bottom vent of the Kokko. Thanks to the high air circulation, the coals will be ready in a few minutes.

Step 4
Open the lid approximately 5 minutes after lighting and the fire starters have burned. The charcoal will start to turn red, indicating that it is glowing and ready for cooking!

Step 5
Using the stainless steel ash tool, you can stir your coals and spread them out in the Kokko if necessary.

Step 6
You can now regulate the heat by limiting the airflow through the chimney and/or the bottom vent. To continue cooking, you can also add more charcoal if needed.

For optimal cooking, the first thing to know is that you need to reach a temperature higher than desired and then let the charcoal cool down. To lower the charcoal temperature, simply close the vents to reduce the oxygen supply.

Generally, the opening at the bottom of the Kokko has the greatest influence on the charcoal temperature. The type and quality of charcoal can significantly affect the air management of the Kokko barbecue.
