Foie gras with Espelette pepper


Preparation time: 10 minutes + 4 hours - Cooking time: 1 hour - For: 4 people

Ingredients:


400 g of fresh foie gras
Salt
Espelette pepper powder, the quantity depends on your taste for spice

Preparation:

1. In a dish, pour the salt and pepper, then place the foie gras inside and cover it with this mixture.

2. Then, put the foie gras to rest in the refrigerator for 4 hours.

3. When it comes out, rinse it and wipe it with a cloth.

4. Place the foie gras in your Kokko to cold smoke it for 1 hour.

5. Take out the foie gras to let it breathe, wait a moment.

6. Then cut it into thin slices and serve!
