While you can cook almost anything on a barbecue, it's sometimes hard to be original when choosing a wine to go with your grilled food. Fortunately, Kokko gives you the best pairings so you know what to bring up from the cellar. To be drunk in moderation, of course!
What to drink with beef?
Entrecôte, rib-eye or prime rib: these superb cuts are truly magnified on the barbecue. To match the grilled flavours of this strong-tasting meat, choose powerful, woody red wines. It is as easy to bring out the grand crus of Bordeaux as it is to choose more modest, full-bodied wines such as Bandol, Côte du Rhône or Pays D'Oc.

What to serve with poultry?
Turkey kebabs, grilled chicken, spicy, marinated, with lemon, thyme, rosemary, garlic, teryaki sauce... The possibilities are endless when it comes to flavouring poultry. With a tangy citrus marinade, we play the freshness card to the hilt with a rosé gris. White wine lovers will prefer a dry Pouilly-Fumé or Jurançon, and those who prefer red wine, a Saumur-Champigny.
With a chicken with strong spices, a red wine will be more appropriate. We turn to the Loire with a Saint-Joseph or a Crozes-Hermitage. Finally, to enjoy grilled chicken, a wine from Languedoc or Beaujolais will do the trick perfectly.

Which wine with fish?
We fly to the south of France to enjoy a sea bream or grilled sea bass, which is accompanied by a rosé from Provence or Corsica. A sardine grill in sight? We stay in the rosé but we choose it with more body like the rosés from Roussillon or Collioure. Those who prefer white wine will not be outdone, opt for dry and fresh wines such as a Côtes de Gascogne, a Baux de Provence or a white Bandol to attenuate the grilled taste of the fish. With seafood, a Chablis or a Chardonnay will be effective.

What to serve with sausages?
Merguez, chipos, knacks, Morteau sausage, Toulouse sausage, etc. – they're the stars of the barbecue! No need to bring out your finest vintages; instead, keep it casual with a rosé, preferably a Bordeaux like Clairet, as it has more character, making it ideal with herbed chipolatas. A Beaujolais or a red from the Rhône, fruity and spicy, will pair wonderfully with merguez.
Which wine pairs well with pork?
Sometimes a bit overlooked the rest of the year, except on charcuterie boards or in salt pork with lentils, pork is particularly well-suited for barbecue cooking: ribs, spare ribs, belly... It smells like American cuisine! Young and fruity wines will wonderfully enhance it. Consider Burgundy with a Pinot Noir or a Gamay, or change regions and opt for a red Sancerre.

And what do you drink with a vegetarian barbecue?
And yes, it is not just meat and fish lovers who will love barbecuing. Tofu, seitan, tempeh: it all depends on how you cook them. In fact, vegetable substitutes are most often eaten marinated to give them flavour, which is ideal for BBQ cooking! Depending on the flavours you have chosen, you will be able to decide which wine to pair with them – and it is not complicated at all, just like with meat and fish!
