You've been the lucky owner of a Kokko for a short time, why did you opt for a Kamado?
I bought my Kokko last spring. I had been looking for a multi-functional barbecue for some time. I came across Kamados and a little later the Kokko brand... After a few months of use, what stands out and what I like most about a Kamado is being able to cook complete and varied meals on the same appliance.
What is your signature dish?
I don't necessarily have one... If I had to choose a quick and efficient dish that I like to make: hanger steak with its pepper crust. To take advantage of the embers and prepare a small side dish, cook a sweet potato and an unpeeled eggplant, pierced directly on the grill, before the piece of meat. A little fresh tzatziki-style sauce and you're done. SIMPLE, VERY FAST, EFFICIENT.
A tip or trick to share with Kokko Lovers??
Always fill your Kamado in the same way, whether for long cooking at low temperature or for grilling. By doing so, you will learn to "know" your Kokko, to learn to better manage the rises and how to manage the temperature according to what you want.
Do you use it often?
As soon as possible, alone, with family, with friends... I can't wait for next autumn/winter for cold smoking (coppa, pancetta, ham nuts and other smoked bacon, fish, ...)
