Ingredients
20 bananas (2/person)
20 cl white rum
100 g butter
300 g caster sugar
Preparation:
1. Prepare the flambé: in a small saucepan, place the white rum, 10 g butter and a teaspoon of sugar. Peel the bananas.
2. On the plancha, over low heat, melt the remaining butter and sugar. As soon as the sugar caramelizes, add the bananas, and let them brown on each side for about 2 min.
3. You have 2 options: Either flambé the bananas on the plancha. Or arrange the bananas on a plate and heat the flambé on the plancha until lukewarm (35g). Then flambé in a saucepan. Using a small ladle, scoop the flambé up into the saucepan several times. Drizzle over the bananas and serve immediately.
4. Tip: use ripe bananas. Serve with sorbet for a surprising hot/cold effect.
