Ingredients:
1.8 kg salmon (300 g/person)
300 g coarse salt
150 g caster sugar
3 pinches of pepper
Honey
Preparation:
1 . First, remove all the bones from the back of the salmon.
2. Cut into 6 slices.
3. Mix the salt, sugar and pepper in a dish.
4. Place the salmon in the dish and cover the top and bottom with the mixture.
5. then place the salmon slices in the fridge for 4 to 6 hours to allow them to soak in.
6. take them out and rub them with a cloth or rinse them with water, then dry them with a cloth
7. Finally, place the salmon in your Kokko, and leave to smoke for 15 to 45 minutes, depending on the intensity of smoking desired.
Once out, you're ready to enjoy!
Optional: You can coat the salmon with honey during smoking.
